BEEF STROGANOFF 
1 1/2 lb. round, sirloin or chuck steak, cut in 3/4 inch squares
Flour
2 tbsp. shortening
1/2 onion, chopped
1 clove garlic, minced (optional)
1 c. mushrooms, sliced
1/2 c. condensed tomato soup or bouillon
1 c. sour cream
1/3 tsp. Worcestershire sauce
1/2 tsp. salt
1/8 tsp. pepper
6-8 drops Tabasco or 1 1/2 tsp. prepared mustard
Parsley, chives, or dill, chopped for garnish

Cut meat in cubes, dip in flour. Brown in shortening and add onion, garlic and mushrooms. Cook slowly a few minutes. Combine remaining ingredients; pour over meat. Cover and simmer 1 hour or until tender. Serve over noodles or rice. Yields: 6 servings.

I have served 60-75 people by multiplying these recipes accordingly.
