EXCELLENT BREAKFAST SOUFFLE 
1 lb. sausage or bacon or ham
9 eggs
3 c. milk
1 tsp. dry mustard
1 tsp. salt
3 slices bread in 1/4 inch cubes
1 1/2 c. grated cheddar

Brown mat; drain. Mix egg, salt, milk, then combine with all other ingredients. Pour into greased 9x13 pan. Cover and refrigerate overnight.

Bake uncovered one hour at 350 degrees. Knife should come out clean when done. Let cool 5 or 10 minutes. Cut into sugars. Serve with muffins, coffee cake, etc. Makes wonderful brunch item. Serves about 9.
