FROZEN BREAKFAST BARS
2 (8 oz.) fruit flavored yogurt
1 c. fresh, canned or frozen fruit, chopped
2/3 c. instant nonfat dry milk
2 tbsp. honey
2 c. Post grapenuts cereal

Place yogurt, fruit, dry milk and honey in blender or food processor. Blend until smooth, leaving fruit a little chunky for more flavor. Fold in 1 1/2 cups cereal and pour into 8 inch square pan. Sprinkle with remaining cereal and gently press down for crunchy topping.

I recommend using 2 cups fruit for best flavor. Fresh strawberries, bananas or peaches with yogurt of same flavor are excellent. Put in freezer overnight. Cut into 8 bars, wrap each in foil and leave in freezer. Serve with milk and juice for a completely nutritionally adequate cold summer breakfast. 8 servings.

Frozen Breakfast Bars

I wanted a cute yummy breakfast that was healthy but appeared to be unhealthy. So I masked this recipe as "Strawberry Cream Pie". I doubled the recipe, used frozen sliced strawberries to blend, cnly used 2 cups grapenuts total, and poured the mixture into 24 individual graham cracker crust shells. I made them the night before, then pulled them out just as people came down for breakfast and squirted on a little Redi-Whip! They were a big hit at the lake house! I served them with a breakfast casserole.
