SWEDISH COOKIES 
1 c. shortening
1 c. butter, softened
2 c. sugar
3 c. flour
1 c. coconut
1 c. ground almonds
1 tsp. baking soda
1 tbsp. baking powder
1 tsp. vanilla

Blend the shortening, the butter and vanilla together. Mix in the sugar, then the soda, baking powder, ground nuts, flour and coconut. It is a very dry mixture that the butter and shortening hold together. Form into log rolls and wrap each log in wax paper. Chill overnight.

Slice and bake at 350°F until light (do not overbake). You have to watch these closely as they are not good if they get brown. I bake them for 7 to 9 minutes. Use a Teflon cookie sheet only!! Let the cookies cool a few minutes while still on the cookie sheet before taking them off.

Makes 80 to 90 cookies.
