POTATO CASSEROLE 
8 to 12 potatoes, cooked and mashed
1 (8 oz.) pkg. cream cheese
1 c. dairy sour cream
chives or 1 small onion, chopped
salt and pepper, to taste

Put all ingredients into a 2-quart casserole dish with butter and paprika on top. Bake at 350°F for 30 minutes. If made in advance and refrigerated, cook longer, about 1 hour. May also be frozen.
