CHICKEN ROLLS | |
4 (3 oz. each) boneless chicken breast halves 1 tbsp. chopped parsley 2 (1 oz.) slices cooked ham, halved 4 (2 oz.) slices mozzarella cheese 1 tbsp. mayonnaise 1 tsp. water 2 tbsp. seasoned bread crumbs 1/2 tsp. salt Preheat oven to 400 degrees. Place chicken between sheets of waxed paper and pound until 1/4 inch thick. Sprinkle one side of each with parsley. Top with slice of ham and slice of cheese. Roll up jelly roll fashion, fasten with toothpicks. Set aside. In small bowl combine mayonnaise and water. In another bowl combine bread crumbs and salt. Roll chicken first in mayonnaise then in crumbs. Bake in shallow pan 20 minutes. Makes 4 servings, 295 calories each. |
