BABE'S APPLE CAKE 
2 c. whole flour
1 c. sugar
1/4 c. toasted wheat germ
1 c. brown sugar
1 tsp. cinnamon
1 c. chopped walnuts
1 tsp. salt
2 beaten eggs
1/2 tsp. nutmeg
1 tsp. vanilla
4 c. diced apples
1/2 c. oil
2 tsp. baking soda

Sift together whole wheat flour, wheat germ, baking soda, cinnamon, salt and nutmeg. Set aside. In large bowl combine peeled and diced apples, sugars, oil, walnuts, eggs and vanilla. Add flour to mixture. Stir gently. Blend well. Turn into 2 inch deep pan. Bake in preheated oven (350 degrees) for 50 minutes or until cake pulls from side of pan. Cool in pan or rack. If desired, sprinkle with confectioners' sugar. Cut into 12 bars. Serves 4.
