EASY SALMON CASSEROLE 
2 tbsp. butter
1/2 tsp. salt and dash pepper
1/2 tsp. dry mustard
1 c. soft bread crumbs
1/2 c. milk
2 eggs, lightly beaten
1 lb. can salmon, flaked (liquid drained and reserved)

Melt butter. Add salt, pepper and mustard; mix well. Add bread crumbs and stir until butter mixture is absorbed. Add milk, eggs and liquid from salmon. Add salmon and mix well. Pour into a well greased 2-quart baking dish. Bake at 350 degrees for 45 minutes, or until firm and brown.

HORSERADISH SAUCE:

1 carton sour cream
2-3 tbsp. horseradish
Juice of 1 lemon
1 c. mayonnaise
1 tbsp. cracked pepper
(Try a little grated onion)

Combine all ingredients and chill well.
