EGGNOG QUICK BREAD 
2 eggs
1 c. sugar
1 c. dairy eggnog (not canned)
1/2 c. butter, melted
2 tsp. rum extract
1 tsp. vanilla
2 1/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg

Heat oven to 350 degrees. Grease bottom only of 9"x5" loaf pan. Beat eggs in large bowl. Add sugar, eggnog, butter, rum and vanilla extract. Blend well.

Lightly spoon flour into measuring cup, level off. Add flour, baking powder, salt and nutmeg. Stir just until dry ingredients are moistened. Pour into greased pan. Bake at 350 degrees for 45 to 50 minutes or until toothpick inserted in middle comes out clean. Cool 10 minutes, and remove from pan. Cool completely.
