HAM AND POTATO CASSEROLE 
1 med. onion, diced
3 tbsp. chopped green pepper
1/2 stick butter
3 tbsp. flour
2 c. milk
1/2 tsp. salt
1/8 tsp. pepper
3 c. ham, cubed and cooked
4 potatoes, cubed and cooked
3/4 c. shredded American cheese

Saute onion and green pepper in butter. Add flour and milk, salt and pepper, stirring until thickened. Add ham and potatoes into 2-quart casserole. Sprinkle with cheese. Bake at 350 degrees for 25-35 minutes.
