GREEK MEATLOAF 
1/2 c. chopped onion
2 tbsp. butter
1/2 c. shredded carrots
1/2 c. shredded new potatoes
2 cloves garlic
2 lb. ground beef
2 eggs
1 1/2 c. dry bread crumbs
3 tsp. salt
1/4 tsp. pepper
4 tbsp. lemon juice
2 tbsp. sugar
1/2 tsp. cinnamon
2 med. size tomatoes

Saute onion in butter in a medium size skillet, remove from heat, stir in carrots, potatoes, and garlic. Toss to coat well. Cover and cook for 5 minutes until wilted but still crisp. Combine meat, eggs, tomato, bread crumbs, salt, cinnamon, pepper, 2 tablespoons lemon juice, and vegetables in a large bowl, mixing lightly. Form into loaf. Place into a lightly greased baking pan. Bake at 350 degrees for 45 minutes. Mix remaining 2 tablespoons lemon juice and sugar in a cup, stir until dissolved. Brush over meat. Bake for 15 minutes or until brown.
