OAT BRAN MUFFINS 
2 c. 100% oat bran, uncooked
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 c. skim milk
1/3 c. honey
1/4 c. salad oil
2 egg whites
1 c. dark seedless raisins (optional, but good)

Preheat oven to 425 degrees. Place paper liners in 12 muffin pan cups. Mix first 4 ingredients in a large bowl. In another bowl, beat milk, honey, oil, and egg whites until blended; stir into oat bran mixture just until moistened. Fold in raisins. Spoon batter into muffin cups to come almost to top. Bake 20 minutes or test for doneness. Immediately remove from pan. Serve warm or cool.

To make Oat Bran Cookies: Preheat oven to 350 degrees. Grease cookie sheet. Prepare the same way only omit skim milk. Drop dough by level tablespoon about 2 inches apart onto cookie sheet. Bake about 15 minutes. Remove with spatula to cool. Makes 2 dozen cookies.
