OAT BRAN AND RAISIN MUFFINS OR
COOKIES
 
2 c. 100% bran uncooked
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 c. raisins
1 c. skim milk
1/3 c. honey
1/4 c. salad oil
2 egg whites

Grease and flour 12 muffin tins. Preheat oven to 425 degrees. Mix first 4 ingredients in large bowl, then add raisins. In another bowl mix milk, honey, oil and egg whites until blended.

Mix into bran mixture just until moist. Spoon into muffin tins and bake about 15 minutes or until inserted toothpick comes out clean. You can use half wheat bran if desired. For cookies leave out the milk and drop dough on cookie sheets and bake at 350 degrees for 10 to 15 minutes until done.
