RAISIN BRAN MUFFIN MIX | |
1 (15 oz.) box Post Raisin Bran 3 c. sugar 5 c. flour 4 tsp. baking soda 2 tsp. salt 1 tsp. cinnamon 1 tsp. cloves 1 tsp. nutmeg 1 c. salad oil 4 eggs, beaten 1 qt. buttermilk 2 tsp. vanilla Mix in a large container the Raisin Bran, sugar, flour, salt, soda, and spices. In another bowl combine the eggs, oil, buttermilk and vanilla. Add the liquid ingredients to the dry ingredients, mixing thoroughly. Cover the container and put it in the refrigerator. When ready to use, stir through the batter to distribute oil through the mixture. Bake in greased muffin tins at 350 degrees for about 15 minutes. This batter will keep in the refrigerator for up to 6 weeks and will make approximately 5 dozen muffins. |
