BAKED VEGETABLE AND CHEESE FOR
ONE
 
1 med. carrot (1/2 c.), thinly sliced
1/2 med. zucchini (3/4 c.), thinly sliced
1/2 med. tomato (1/2 c.), diced
1 tsp. parsley
1/4 to 1/2 tsp. Italian seasoning
2 slices Lite Line cheese (equivalent to 100 calories)

Preheat oven to 350 degrees. In an 8-inch pie plate, layer carrots, zucchini and tomato. Sprinkle with seasonings. Cover with foil, bake for 30 minutes, until vegetables are tender-crisp.

Cut cheese into 1/2 inch strips. When vegetables are tender-crisp, remove foil. Arrange cheese strips to form a criss-cross design on vegetables. Bake until cheese is slightly melted, about 2 minutes. 165 calories per serving. Yield: 1 serving.

ALTERNATIVE: Substitute carrots with any vegetables: mushrooms, green pepper, celery, etc.
