PINEAPPLE DELIGHT | |
1/2 lb. vanilla wafers or 1/2 of 12 oz. pkg. 1 1/2 c. confectioners' sugar 1/2 c. butter 2 eggs 1 sm. can crushed pineapple 1/2 pt. whipping cream 1 c. pecans, chopped Crush wafers. Butter bottom of pan and put in 1/2 wafers. Sprinkle a few drops of water over it. Cream butter and sugar; gradually add beaten eggs and beat until smooth. Pour mixture over crumbs. Drain pineapple. Whip cream and add pineapple and nuts. Pour over mixture and top with the rest of the wafer crumbs. Refrigerate. This is better if prepared the day before it is to be served. |
