PINEAPPLE COFFEE CAKE 
3/4 c. sugar
1/4 c. soft shortening
1 egg
1 1/2 c. sifted flour
1/2 c. milk
2 tsp. baking powder
1/2 tsp. salt
2 tbsp. softened butter
2 tbsp. honey
1/2 c. drained crushed pineapple

Mix together: sugar, shortening, egg. Stir in the milk. Sift together and add: flour, baking powder and salt. Spread batter in a greased and floured 9 x 9 inch square pan. Top with a mixture of softened butter, honey and well drained pineapple. Bake at 375 degrees for 25 to 35 minutes until wooden pick thrust into center comes out clean. Serve while still warm.
