10 lbs. center cut pork steaks, grind coarse, no fat 2 glasses water 9 tbsp. Kosher salt 1 tbsp. pepper 1 tbsp. marjoram 1 tbsp. ground caraway seed 8 tbsp. mustard seed 1 tbsp. oregano 2 tbsp. paprika 1 tbsp. sage 1 lg. onion, minced 3 pieces garlic (optional) Grind meat. Mix all spices in water and then add to ground meat. Let stand overnight and then put in casings. May be cooked or frozen for future use. |
