APPLESAUCE-OATMEAL COOKIES 
2 c. flour
1 c. rolled oats
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. butter
1 c. brown sugar
1 egg
1 tsp. vanilla
1 c. applesauce

Mix well the flour, oats, salt, soda and cinnamon. Set aside.

In a large bowl, cream butter and sugar until light. Beat in egg and vanilla. Stir in flour mixture, alternately with applesauce, until well blended.

Drop by heaping teaspoonful 2 inches apart on greased cookie sheets. (Press 1/2 walnut into each cookie; it gives a wonderful flavor.) Bake in 375 degree oven for 10 minutes until golden around the edges and top springs back when lightly pressed. Makes about 60 cookies.
