HOT GERMAN POTATO SALAD 
Cook 2 lbs. (7 med. sized) potatoes, peel & slice
1 med. onion, chopped or several green onions, chopped
1 hard-boiled eggs, sliced
Salt & pepper to taste

DRESSING:

4 strips bacon, cooked crisp
3/4 c. sugar
1 raw egg
1/3 c. vinegar
3 tbsp. water

Cook bacon until crisp. Remove bacon from pan. In a cup measure 3/4 cup sugar and stir into it a raw egg. Heat bacon drippings and then stir into it 1/3 cup vinegar and 3 tablespoons water. Then add the sugar/egg mix and stir and cook down into a medium heavy liquid.

Make layers of potato, onion, bacon bits, boiled egg, salt and pepper to taste.

Pour DRESSING (above) over layered potatoes and gently mix in. This can be served hot, warm or cold. It is a favorite in our family.
