BREAD & SAUSAGE STUFFING 
1 lb. bulk sausage
1 c. butter
1 1/3 c. chopped onion
1 1/4 c. chopped celery
4 qts. soft bread crumbs
1 c. chicken stock
1 tbsp. salt
1/2 tsp. pepper
1 tbsp. poultry seasoning
2 tbsp. chopped parsley
1 sm. jar mushrooms

Cook sausage and combine with remaining ingredients. This makes a moist stuffing. For a dry stuffing use dry bread crumbs.

Makes enough for a 10 pound bird with enough left over for 5 to 6 stuffing molds, unless your family likes it as much as mine, then I double the recipe for 20 to 25 people.
