PINEAPPLE CHEESE CASSEROLE 
1 (20 oz.) can pineapple chunks
1/2 c. sugar
3 tbsp. all purpose flour
1 c. shredded, Cheddar cheese
1/4 c. melted butter
1/2 c. crushed Ritz crackers

Drain pineapple, reserve 3 tablespoon juice. Combine sugar and flour, stir in reserved pineapple juice. Add cheese and pineapple chunks mixing well. Spoon into a greased 1 quart casserole. Combine melted butter and cracker crumbs. Sprinkle over pineapple mixture. Bake at 350 degrees 20 to 30 minutes (until crumbs are lightly browned).
