PINEAPPLE CHEESE CASSEROLE 
1 (20 oz.) can pineapple chunks
1/2 c. sugar
3 tbsp. flour
1 c. sharp cheese, shredded
1/4 c. butter, melted
1/2 c. Ritz crackers, crushed

Drain pineapple, saving 3 tablespoons of juice. Combine sugar and flour. Stir in juice. Add cheese and pineapple chunks. Mix well. Pat into greased 1 quart casserole. Top with cracker crumbs and butter (mixed). Bake at 350 degrees for 20 to 30 minutes.
