BEEFY POTATOES 
6-8 med. potatoes, sliced
2 onions, sliced
1 can beef consomme
Salt & pepper

Wash potatoes well and slice thin. You do not have to peel. Layer 1/2 potatoes, 1/2 onions, 1/2 potatoes and 1/2 onions. Pour consomme soup over potatoes. Sprinkle with salt and pepper. Bake at 375 degrees for 45-60 minutes until potatoes are tender and have absorbed some of the consomme. Great with beef or breakfast casseroles.
