MARINATED VEGETABLES 
1 head cauliflower
3 to 4 carrots, sliced
1 to 2 green peppers
2 to 3 stalks celery
1 (5 oz.) jar Spanish olives
1 1/2 c. cider vinegar
1 c. oil
4 tbsp. sugar
1 tsp. oregano
2 tsp. salt
1/2 tsp. pepper

Prepare vegetables. Mix together and boil vinegar, oil, sugar, oregano, salt and pepper. Add vegetables and cover. Boil. Shut off stove and let simmer until tender, 5 minutes. Refrigerate. Shake or mix vegetables every 2 to 3 hours. Allow to marinate about 8 hours.
