CRUISE SHIP SHRIMP AND OKRA
GUMBO
 
1/4 c. olive oil
1/4 c. butter
1 c. onion, chopped
1 c. green pepper, diced
8 c. stewed tomatoes
3 c. chicken broth
2 bay leaf
1/2 tsp. thyme leaves, crushed
Dash Tabasco sauce
Dash Worcestershire sauce
2 chicken bouillon cubes
1/8 tsp. freshly ground pepper
1 tbsp. Accent
2 c. okra, cut in 1/2" chunks
2 cloves garlic, minced
1 1/2 lb. shrimp, raw, shelled, peeled & cut in half
1 tsp. file powder

Add butter and oil to a large soup kettle with onions and green pepper and saute until vegetables are soft. Add stewed tomatoes, chicken broth, bay leaf, crushed thyme leaves, dash of Tabasco and Worcestershire sauce, chicken bouillon cubes, freshly ground pepper, Accent, okra and garlic. Simmer 45 minutes. Add shrimp and cook until shrimp is done (5 minutes). Add file powder and incorporate thoroughly. Yield: 18.
