ZUCCHINI & CREAM RELISH OR DIP 
4 c. thinly sliced zucchini
1/2 c. thinly sliced green onions, include tops
1/2 c. chopped parsley
1 c. sour cream or yogurt

Toss vegetables together. Gently stir in sour cream. Cover and chill; letting flavors blend. This can be made into a dip for crackers by using grated zucchini. Use young zucchini and leave the skin on.
