CASSEROLE AU GRATIN 
First prepare:

2 c. chunked ham, chicken or turkey
4 to 5 sliced cooked carrots (or 10 oz. pkg.)
1 to 2 c. cooked cauliflower and/or broccoli (10 oz. pkg.)

CHEESE SAUCE:

8 oz. mild Cheddar cheese
3 tbsp. EACH butter and flour
1 pt. sour cream
Milk as needed

In skillet or saucepan make roux of butter/flour. Stir in sour cream, mixing well over low heat. Add cheese and simmer until blended well. Add milk as needed. Make a creamy consistency.

TOPPING:

Put all together in a 9 x 13 inch pan or casserole dish. Top with crushed potato chips, French fried onion rings or a package biscuit/crescent roll dough; spread thin over top.

Bake at 350 degrees until brown and bubbly 20 to 30 minutes. Serves 6 to 8.
