ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated, peeled zucchini
3 tsp. vanilla
3 c. self rising flour
1 tsp. cinnamon
1/2 c. chopped nuts
1/2 c. raisins
1 c. drained pineapple
1 c. chopped dates

Beat eggs until fluffy; add oil, sugar, zucchini, and vanilla and mix well. Mix flour and cinnamon together and add to zucchini mixture. Fold in nuts, raisins, pineapple, and dates. Put into two 9 x 5 x 2 inch loaf pans and bake at 350 degrees until done. Test with toothpick.
