KATHY FRADO'S ZUCCHINI BREAD | |
1 c. vegetable oil 3 eggs 1 tbsp. vanilla 2 c. sugar 2 c. grated zucchini, include skin and juice 3 c. flour 1 tbsp. cinnamon 1 tsp. salt 1 tsp. baking soda 1/4 tsp. baking powder 1 c. nuts, raisins or dates (optional) Mix together first 5 ingredients. Sift remaining ingredients. Beat wet ingredients. Add dry ingredients to wet ones. Add nuts or other ingredients. Bake in greased loaf (2) pans at 325 degrees for 1 hour 20 minutes. Cool. |
