POLYNESIAN SALAD 
1 lb. spinach leaves
1 small can drained mandarin oranges
1 small red onion, sliced thin and separated into rings

Wash spinach leaves and pat dry in towel. Combine in bowl with oranges and onion.

DRESSING:

2 tbsp. wine vinegar
1 tsp. Dijon mustard
1/2 tsp. salt
Pinch cayenne
1 tbsp. honey
6 tbsp. oil
1 tsp. poppy seeds

Combine all dressing ingredients in a jar and shake. Pour over combined salad ingredients just before serving.
