CHICKEN CACCIATORE | |
1 broiler/fryer chicken 2 1/2 to 3 lbs., cut up 1 large onion, thinly sliced 2 (6 oz.) cans tomato paste 1 (4 oz.) can mushrooms, drained 1 tsp. salt 1/4 tsp. pepper 1 to 2 cloves of garlic 1 to 2 tsp. oregano leaves 1/2 tsp. basil 1/2 tsp. celery salt (optional) 1 bay leaf 1/4 c. dry white wine Place sliced onion in the bottom of a crock pot, and add the chicken pieces. Stir together tomato paste, mushrooms, salt, pepper, garlic, herbs and white wine. Pour over the chicken. Cover and cook on low for 7 to 9 hours. Serve chicken pieces over hot buttered spaghetti or vermicelli. |
