BREAD OMELET 
6 slices Texas toast
1 lb. sausage
Green pepper, chopped
Onion, chopped
16 to 18 eggs
Cheddar cheese, shredded

Toast both sides of each slice of bread. Place in 11 x 13 inch baking dish. Brown sausage and drain. Saute' green pepper and onion. Whip 16 to 18 eggs. Add salt and pepper. Spread onion, green pepper and sausage over bread. Pour eggs over this. Top with Cheddar cheese, cover and refrigerate overnight. Bake at 350 degrees. Bake covered 45 minutes, uncovered 15 minutes until brown. Check center for doneness.
