CHICKEN-ZUCCHINI CASSEROLE 
3/4 lb. bite-size pieces uncooked chicken or turkey
6 zucchini, sliced
1 c. grated carrots
1/4 c. onion, chopped
1/4 c. melted butter
1 c. sour cream
1 can cream of chicken soup
8 oz. Stove Top Stuffing mix

Toss butter with stuffing. Place 1/2 mixture in a 9x13 baking dish. Steam or microwave zucchini and onion until tender-crisp; drain. Combine with soup and sour cream. Pour 1/2 mixture over stuffing. Layer chicken on top. Add another layer of vegetable mixture and finish with stuffing. Bake at 350 degrees 25-30 minutes until brown and bubbly. Serves 6-8. NOTE: You may use more chicken if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
