BEET RELISH 
8 or 9 lg. beets
1 head red cabbage
2 c. onion
2 tbsp. salt
2 c. sugar
1/2 qt. vinegar
Pickling spice

Grind beets, cabbage and onions. Add salt, sugar, vinegar and spices. Boil until tender. Put in hot jars and seal.
