BAKED MEAT AND RICE CASSEROLE | |
1 1/2 c. uncooked rice 5 eggs, beaten 1 c. grated Romano cheese 2 finely chopped onions 3 cloves of garlic, finely chopped 1 sm. can of tomatoes, chopped 1 c. eggplant, chopped 1 lb. beef, 1 lb. pork, chopped meat (any 2 lb. meat) 2 tbsp. oil 1 c. milk 1 oz. butter 1/2 c. water Salt and pepper to taste Cook rice in boiling water until tender about 20 minutes. Drain and set aside. (For sauce) in a frying pan heat oil and add garlic, onion and eggplant, and cook until nearly done. Add tomatoes and cook for 5 minutes. Add the chopped meat and let simmer for 5 to 10 minutes. If dry a 1/2 cup of water. Add salt and pepper. In a big pot combine rice, beaten eggs, cheese, sauce, and milk. Mix well. Put in a dish for baking. On top cut butter in little pieces and put on top. Bake until lightly brown and no juices are left. Bake at 350 degrees for 45 minutes to 1 hour. Serves 4 to 6. |
