ZESTY BROCCOLI HAM SALAD | |
1 1/4 lbs. fresh broccoli 1 1/2 c. cubed lean cooked ham 1/2 c. (2 oz.) shredded Swiss cheese 1/4 c. chopped sweet red pepper 1/4 c. chopped green onion 1/2 c. reduced calorie Italian salad dressing 1/4 c. cider vinegar 1 tbsp. Dijon mustard 1/2 tsp. dried whole savory 1/8 tsp. fresh ground pepper Trim off large leaves of broccoli. Remove tough ends of lower stalks. Wash broccoli. Add broccoli, ham, cheese, red pepper and onion in a large serving bowl; toss gently. Combine remaining ingredients in a small bowl; stir well. Pour over vegetable mixture. Toss gently. Cover and refrigerate 8 hours or overnight. Yield 6 servings. (123 calories per main dish serving.) |
