WILTED SPINACH SALAD 
6 c. torn fresh spinach
1 c. sliced Fresh mushrooms
1/4 c. sliced green onions
3 slices bacon
2 tbsp. vinegar
1 tsp. sugar
1 hard cooked egg, chopped

Combine spinach, mushrooms, and green onion. If desired, sprinkle with pepper. Set aside.

In skillet cook bacon until crisp. Remove bacon, reserve drippings in skillet. Crumble bacon; set aside. Stir vinegar, sugar and 1/4 teaspoon salt into drippings. Heat to boiling, remove from heat. Add the spinach mixture. Toss until coated. Transfer to a serving dish. Top with chopped egg and bacon. Serve immediately.
