BASIC MARINARA 
2 (28-30 oz.) cans crushed tomatoes
2 (6 oz.) cans tomato paste
4 tbsp. sugar (more if sweet marinara is desired)
1 tbsp. oregano
1 tbsp. basil
1 tsp. garlic powder
1 tsp. onion powder
2 bay leaves
1/2 tsp. garlic in oil, chopped OR 1 clove garlic, chopped + 1/2 tsp. olive oil

In 3 quart saucepan, place garlic and oil over low heat. When oil is slightly bubbling and garlic is gold in color (not brown), stir in crushed tomatoes and tomato paste. Blend until paste is absorbed into sauce, then add seasoning and sugar; stir and cover. When sauce begins to bubble, stir; recheck flame to be sure it is low. Cover and let simmer 45 minutes to 1 hour, stirring occasionally. Serves 8.

Optional: Add sauteed onions, peppers or mushrooms.
