ZUCCHINI PIE 
2 tbsp. olive oil
6 sm. zucchini (sliced)
1 sm. onion (sliced)
1 garlic clove (minced)
4 eggs (beaten)
1/2 c. Cheddar cheese (shred)
1/2 c. grated cheese
1/2 c. pepperoni (sliced)
1/2 c. Mozzarella cheese (cubed)
1/2 c. Provolone cheese (cubed)
Salt and pepper to taste
1 deep dish 9 inch pie crust

Saute onions and garlic in oil about 3 minutes. Add zucchini and saute until tender. Drain well.

In a bowl add all ingredients including zucchini. Mix until all coated with egg. Put into pie crust and bake at 350 degrees for 1 hour.

This recipe can be made with 2 packages frozen spinach, thawed and drained or 2 cans artichoke hearts, drained and cut in half following same directions.
