OATMEAL - RAISIN COOKIES 
6 tbsp. safflower oil
3/4 c. honey
1/2 c. 1% milk
2 tsp. vanilla
1 c. whole wheat pastry flour
1 1/2 c. rolled oats
1/2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. raisins

Blend oil, honey, milk, and vanilla; combine dry ingredients. Add to oil mixture. Stir to blend. Drop by large serving spoonfuls onto Teflon baking sheets. Bake at 300 degrees for 25-30 minutes. Remove to wire racks to cool.
