OZARK HONEY - OATMEAL COOKIES 
1/2 c. shortening
1 1/4 c. sugar
2 eggs
1/3 c. honey
1 c. flake coconut
1 tsp. baking soda
1 tsp. salt
1 3/4 c. flour
2 c. quick-cooking oats

Heat oven to 375 degrees. Mix shortening, sugar, eggs, honey, soda and salt thoroughly. Stir in remaining ingredients. Shape dough by rounding teaspoonfuls into balls. Place 2 inches apart on ungreased baking sheet. Flatten with bottom of glass dipped in sugar. Bake 8-10 minutes or until light brown. Immediately remove from baking sheet.

OZARK HONEY-RAISIN COOKIES:

Omit coconut; stir in one cup of raisins and 1/2 cup chopped nuts. (If using self-rising flour omit soda and salt).

Crispy and chewy at the same time, when freshly baked.
I've been making these for more than 50 years. It was on the back of a Gold Medal Flour bag. Everyone loves these cookies and you can vary the nuts and chips.
Don't overbake these.
