OZARK HONEY - OATMEAL COOKIES | |
1/2 c. shortening 1 1/4 c. sugar 2 eggs 1/3 c. honey 1 c. flake coconut 1 tsp. baking soda 1 tsp. salt 1 3/4 c. flour 2 c. quick-cooking oats Heat oven to 375 degrees. Mix shortening, sugar, eggs, honey, soda and salt thoroughly. Stir in remaining ingredients. Shape dough by rounding teaspoonfuls into balls. Place 2 inches apart on ungreased baking sheet. Flatten with bottom of glass dipped in sugar. Bake 8-10 minutes or until light brown. Immediately remove from baking sheet. OZARK HONEY-RAISIN COOKIES: Omit coconut; stir in one cup of raisins and 1/2 cup chopped nuts. (If using self-rising flour omit soda and salt). |
