JAMBALAYA 
Cajun sausage, cut bite size
1/2 c. each: peppers, celery, onion
1 (16 oz.) can tomatoes "Cajun"
1 can water or more, depending on rice
Rice - Minute (about 1/2 c.)

Cook sausage. Saute vegetables. Add rest of ingredients. Cover and simmer about 30-45 minutes. Sprinkle Cajun seasoning to taste.
