MOM'S FAMOUS SPINACH 
2 bunches fresh spinach
4 slices bacon
2 scrambled eggs
1/2 c. onion, chopped fine
1/4 bell pepper, chopped fine
Salt & pepper to taste
1/2 to 1/2 c. mayonnaise

Wash and prepare spinach. Place in saucepan with onion and bell pepper and only enough water to cook over low heat without scorching. Brown bacon, crumble, add to spinach. Scramble eggs, crumble. Drain any water off spinach. Add eggs and mayonnaise, serve.
