ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. white sugar
2 c. grated, peeled zucchini
2 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
2 tsp. cinnamon
1 c. nuts

Beat eggs, oil, sugar, zucchini and vanilla together.

Sift flour, salt, soda, baking powder and cinnamon together and add to egg mixture. Add nuts.

Bake at 325°F for 1 hour.

Makes 2 loaves.
