BROWN SUGAR CINNAMON SQUARES 
Preparation time: 5 minutes. Baking time: 30 to 35 minutes. Oven temperature: 275 degrees. Yields: 64 cookies.

1 c. butter
3/4 c. granulated sugar
1/2 c. light brown sugar
1 tsp. vanilla
1 egg, separated
2 c. all-purpose flour
1 1/2 tsp. cinnamon
Raw sugar

1. Beat the butter until very light.

2. Slowly add the sugars and cream together.

3. Add vanilla and egg yolk. mix well.

4. Combine flour and cinnamon. Stir into butter mixture.

5. Lightly grease a 10 x 15 inch cookie sheet. Press out mixture with your fingers until evenly spread in pan.

6. Beat egg white. Spread over batter. Sprinkle with additional cinnamon and raw sugar.

7. Bake at 275 degrees for 30 to 35 minutes until golden brown. Cut while warm into 64 squares.

TIPS: Two teaspoons grated orange rind can be added to cookie batter.
