NAVAJO BREAD | |
2 c. flour 2 tsp. baking powder 1/2 c. powdered milk 1/2 tsp. salt Mix the ingredients listed above, adding warm water to form dough. Knead until dough is soft but not sticky. Cover with a cloth and let stand for 2 hours. Shape into balls about 2 inches across, then flatten until a circle about 8 inches in diameter is formed. A rolling pin may be used. Put about 1/2 inch of lard or shortening in a large frying pan and heat. Test the temperature of the grease by dropping in a pinch of dough. If it browns quickly but does not burn, the grease is the correct temperature. The bread is fried light brown on one side, then turned and browned on the other. The thinner the dough circles, the crisper the fry bread. Some cooks make a small hole in the center of the dough before frying. To sweeten, the fry bread may be topped with brown sugar or honey. |
