ITALIAN BAKED CAULIFLOWER 
1 lg. onion, chopped
2 tbsp. butter
3 c. cauliflower florets
3 tbsp. tomato sauce
2 c. shredded Cheddar cheese
Salt and pepper to taste
1/2 c. bread crumbs, optional

Saute' onion in butter. Add cauliflower and 1/2 cup water. Salt and pepper to taste. Add tomato sauce. Cover and simmer until cauliflower is steamed through. Transfer to a baking dish. Layer with cheese and sprinkle bread crumbs over the top (if desired). Bake at 350 degrees uncovered for 20 minutes.
