ROLLED CHICKEN BREAST | |
6 individual breasts of chicken 6 slices baked ham 6 slices Swiss cheese 2 c. seasoned bread stuffing Preheat oven to 300 or 350 degrees. Debone the chicken breasts. Start on the fat side and slice against the bones; easing and loosening until they come away from the meat. Roll the chicken, then wrap the cheese around it. Wrap the ham around the whole thing. Secure with toothpicks. Do this for each breast. Roll the stuffing into fine bread crumbs. This can be done early in the day. Beat 2 eggs until light. Dip each piece into the egg batter, then into the crumbs. Melt a stick of butter in a shallow baking dish. Lay each piece in the butter and bake for 45 minutes. During the baking, turn once and baste. Use a low rack in the oven so they won't get too brown. |
