UP NORTH SALMON CASSEROLE 
1 lb. red salmon, skinned and bones removed
2 c. cottage cheese
2 eggs, slightly beaten
1 c. cracker crumbs
1 c. shredded Cheddar cheese
3 tbsp. chopped green peppers
1 tbsp. chopped onions
1 tbsp. lemon juice
1/8 tsp. pepper
Salt to taste

Combine all ingredients and mix very well. I put in food processor and blend. Put in greased casserole. Bake 350 degrees 45 minutes. Garnish with lemon wedges and parsley. Serve with:

LEMON ALMOND BUTTER SAUCE:

Heat together and serve: 2 tbsp. lemon juice 1/2 c. slivered almonds
